Mediterranean Wraps
I came up with the recipe on whim, trying to find something filling, healthy, and easy to throw together. Try this out for your next breakfast or lunch.

Ingredients
Sandwich wraps
Chicken sausage (I used Trader Joe’s Italian style)
Hummus (I used roasted garlic)
Kalamata Olives
Roasted red peppers
Sun dried tomatoes (no oil)
Spinach
Red onion - sliced
Feta cheese - crumbled
Parsley
Lemon for serving
Recipe Steps:
Cook chicken sausage as instructed on package. I put them in my air frier for around 8 minutes.
While the sausage cooks prep ingredients that may need slicing - onion, roasted red pepper, parsley
Lay out your wraps, spread one side with hummus.
Place fresh ingredients on top - spinach, red pepper, sun-dried tomatoes, olives, red onion, parsley, and feta crumbles.
Once sausage is done cooking place in the wrap. Squeeze lemon on top, wrap up , and enjoy!
