Chia Seed Pudding with Fall Inspired Flavors

Ingredients for the Pudding:

1 cup milk of your choice

1/2 cup yogurt of your choice (I like greek yogurt for the protein content)

3 tbsp of chia seeds

1 tsp of vanilla extract

Optional - 1tbsp maple syrup or honey

To make the pudding: add all ingredients in a bowl and whisk together. Let sit in the fridge for around 30 minutes or overnight to set.

For pumpkin version add:

1 cup pumpkin puree

1 more tbsp of chia seeds (total of 4 tbsp)

1 tsp pumpkin pie spice

1 tsp cinnamon

Pinch of salt

Optional - pecans for topping

Maple syrup or honey drizzle on top

To make the pumpkin version: Mix wet ingredients together (pumpkin, milk, yogurt, vanilla extract, maple syrup or honey if using). Mix spices together in a separate bowl. Whisk mixed dry ingredients and chia seeds to the wet mixture. Add your toppings and place in the fridge to set.

Tip: Pumpkin puree can be tart, if you like sweeter add another tbsp or two of maple syrup or honey.

For the sweet apple cinnamon version add:

1/2 cup diced apples (I like honey crisp or Granny Smith)

1 tsp of cinnamon

1/2 tsp of nutmeg

1 tbsp maple syrup or honey drizzle

1 tbsp butter

To make sweet apple topping: melt butter in a sauce pan, stir in apples, cinnamon, nutmeg, and sweetener. Heat together on low until apples become soft, stirring often. Scoop on top of prepared chia seed pudding and enjoy.
